Baby Food Recipe - Zucchini Fritters
Zucchini Fritters are a super easy baby food recipe to make and loved by the whole family. They can safely be given to your baby from 8 months. Zucchini fritters are fantastic as a snack and also an excellent finger food. Easy for little hands to pick up and nibble on and packed with healthy vegetables – fritters make the perfect baby led weaning food. These fritters are also perfect for lunch boxes. These zucchini fritters freeze beautifully and can be stored up to 3 months in deep freeze.
What are the nutritional benefits of zucchini for your baby?
Eating the skin is how baby will get all those wonderful vitamins and nutrients. Zucchini contains vitamin A, which is great for bone growth and the immune system; and it's a rich source of potassium and magnesium. When the zucchini is cooked, the skin softens, making it easy for baby to digest.
Should I peel the zucchini?
When putting your zucchini in a fritter, or roasting zucchini ‘fingers’, you don’t need to peel. However when making a zucchini in a puree, it is easier when you peel.
There is a lot of fibre and goodness in the skin of many vegetables so in terms of zucchini’s nutritional value, having the skin on is GREAT for your baby’s gut flora and overall health.
Zucchini is considered a slimy food.
This means that it is moderate risk of choking, because it can slip and slide easily inside your baby’s mouth!
So aside from an initial puree, and inside fritters, it isn’t something I would be feeding my baby as a solo meal all the time.
You might like to try zucchini chips, if you have a dehydrator, once your baby is over 10 months of age.
Zucchini Fritters Recipe
PREPARATION: 10 minutes
COOKING TIME: 30 minutes
SERVES: 6-8
Fritter Ingredients
2 – 3 zucchini, grated and excess moisture squeezed out
1 egg, lightly beaten
1spring onion, finely sliced
1⁄2 cup fresh coriander, mint or parsley, coarsely chopped
1 ⁄2 cup self raising flour - or gluten free alternative such as chickpea or almond flour
1 - 2 tbsp. coconut oil or grass- fed ghee
Optional:
1⁄4 cup grated parmesan cheese
Method - How to cook zucchini for your baby
In a large bowl, place the zucchini, flour, spring onion, fresh herbs, egg (and parmesan). Mix to combine.
Heat a frying pan on medium to high heat and and add the coconut oil or ghee.
To make your fritters, add one tablespoon of batter at a time onto the pan, spreading them evenly apart, fitting as many as you can.
Cook for 2-3 minutes on each side until golden brown, adjusting the heat if you need.
Repeat steps 4 - 5 with the remaining batter.
