Slow cooked beef ribs your children will love!

Until last week I had never even cooked with beef short ribs. I am not the most adventurous chef and tend to stick to the basics! I'm also one of those people who finds a recipe I love, cooks it to death, and then gets so sick of it I move onto the next favourite recipe - this one is definitely on the favourites list now!

This is our first winter with a slow cooker, so slow cooking in general is very new to me. I'm still learning as I go and doing my best to adapt recipes to our unusual family diet! I don't tolerate nightshades and many slow cooker recipes tend to use a tomato or two. We aren't full autoimmune paleo but we are borderline at times, depending on how our bodies are going. In general I work on a rotation diet, having foods every 4-5 days. This is thought to reduce the chances of your immune system reacting to foods, such as if you were eating the same foods every single day. I'd highly recommend this approach if you've got a sensitive digestive tract or know your immune system is reactive. Particularly during times of stress when your tolerance reduces.

Back to this slow cooked beef ribs! It is quite a fatty dish. It felt really nourishing, most probably from the broth. It's perfect for anyone maintaining a high fat low carb diet. I served it with some steamed cauliflower and broccoli. It would have been nice with cauliflower rice or quinoa too.

Slow Cooked Beef Ribs Your Children Will Love

What you need: 

  • 1 tbsp beef tallow

  • 2 x beef short ribs

  • 1 cup bone broth (I used chicken as it was already in the fridge)

  • 1 tbsp Italian seasoning

  • 3 carrots roughly chopped

Method: 

Place the beef tallow into the slow cooker and let it melt

Add the carrots, with beef ribs on top (I didn't brown them but you can if you like)

Cover with broth (it won't cover the whole thing)

Finish with Italian seasoning over the top

Cook on high heat for 8 hours

Once complete, remove the bones from the beef, break apart the meat and mix back with the broth and vegetables.

Serve with your choice of vegetable or grain - it's yummy and juicy so something to soak it up is nice!

This took me all of about 20 minutes to prepare. I left it in the slow cooker all day, and the best part of all is both children devoured it. I loved it too!
