Slow Cooked Lamb Casserole (for you and your baby!)

There are a lot of positives about this recipe!

This recipe is GREAT when you want to feed your baby the same food as the rest of the family. I personally love giving my baby our foods (when I can) because it gets him used to our family food, plus it means less cooking for me! The meal is ready at the same time too, which means we can sit at the table with our baby at this high chair, and he can begin to feel a part of the family as he can eat with us. I secretly like that it means he isn't begging me for my food (doesn't matter how much I feed him, he always wants what I'm eating!). Lastly, slow cooking your meal all day means when it comes to dinner time, you don't have to juggle grizzly babies and cooking!

Slow Cooked Lamb Casserole

Ingredients

  • 3-4 Lamb shanks or necks

  • 1 cup Potato flour

  • 1 tbsp Coconut oil

  • 2 Medium brown onions

  • 3-4 cloves of Garlic

  • 1 can of Diced tomatoes

  • 1 bottle of tomato sauce (we buy one from the local organic food store that is 100% tomato)

  • 1 tsp Basil

  • 1 tsp Italian herbs

  • 2-3 Potatoes

  • 2 medium Carrots

  • 4-5 stalks of Celery plus the celery heart

  • 1 tsp himalayan sea salt (optional)

 

Method

  1. Coat the meat in potato flour - just a thin layer, whatever sticks to the meat

  2. Melt the coconut oil in a fry pan, and brown the meat for a few min

  3. Take the meat out and place in the crock pot or slow cooker

  4. Finely chop the onions and garlic

  5. Put them in the same pan, add more oil if needed, cook until golden

  6. Place onions and garlic with the meat in the crock pot or slow cooker

  7. Add the tomatoes, tomato sauce, herbs and salt

  8. Cook on low heat option for about 4 hours

  9. Add potato, carrots and celery

  10. Cook for 3-4 hours, or until the meat is falling off the bone

 

Extra tips:

  • You can add the vegetables at the beginning if you like (or if you're going to be out for the day!) - just remember the longer they cook, the mushier they get. So it depends if you want some texture and chunks in your casserole.

  • When giving to your baby, make sure you get every last bone out of their serving. Break the meat and vegetables into easy to bite servings.
